Love it or hate it, grapefruit isn’t for everyone. Throughout history, mixologists have tinkered with grapefruit, experimenting, synthesizing, and ultimately landing on a handful of truly delicious grapefruit cocktail masterpieces, that have stood the test of time. Of the few, The Paloma remains positioned at the top of the list.
Argued by some, The Paloma, is the most popular cocktail in Mexico. Yes, even more, popular than the world-renowned Margarita. It’s popularity isn’t just because Mexico has an abundance of grapefruits and Mexicans love grapefruit soda, but because it is so damn refreshing, easy to make, and celebrates Tequila!
To this day, little is known about the true origins of the Paloma. Some think it was named after a popular Mexican folk song, La Paloma, meaning “the dove” in Spanish. While others think it was created in the early 1900s by Don Javier Delgado Corona, owner, and master bartender of La Capilla, in Tequila, Mexico.
No matter who you believe, the dove or Don Javier, the Paloma we imbibe today has changed little since it was created. Combining tart grapefruit (soda or fresh juice) with simple syrup and tequila, this recipe is still the gold standard that every Paloma is judged by.
